3 tbs shortening or 1/4 cup oil
3 tbs sugar or 1/8 cup honey
1 tsp salt
Cool... To lukewarm by adding 1/2 cup water.
Blend in ... 1 egg (and 1/4 cup mashed potatoes if available)
Add... 1 package yeast (or 1 tbs loose, dry, granular)
Add ... 3 cups flour; mix until dough is well-blended and soft. (May need to add one more tablespoon of flour when using oil.)
Knead... for 5-8 mins till dough feels like a baby's bottom. Place dough in greased bowl and cover. Let rise in warm place (80 to 85 degrees) about 1 hour or till twice in size, or place in bread machine.
For cinnamon rolls... Roll out dough on well-floured board to 18 x 12 inch rectangle. Spread with Cinnamon filling. Roll as for jelly roll; cut into 1" slices and place cut side down in greased, 9 x 13 inch pan or greased muffin pans. Let rise in warm place (80 to 85 degrees) until high, about 1 hour. Bake in moderate oven (375 degrees) for 15 to 20 min.
For pecan filling... roll out dough as for cinnamon rolls. Spread dough with filling. Roll and cut as for cinnamon rolls. Spread pecan mixture evenly in bottom of 9 x 13 inch pan. Place rolls on top of pecan mixture. Let rise and bake as for cinnamon rolls.
For dinner rolls... Divide dough in half. Cut 8 pieces from each half and roll into balls. Place 8 balls into greased 8 inch round pan, and 8 rolls in another pan or place all 16 balls into greased 9 x 13 inch pan. Let rise and bake as for cinnamon rolls.
Cinnamon Filling
Mix until crumbly ... 1/4 cup sugar
2 tbs bis quick mix or flour
2 tsp cinnamon
2 tbs firm butter
Pecan Filling
Spread dough with... 2 tbs melted butter
1/4 cup sugar
1 tsp cinnamon
Combine and spread on bottom of pan... 1/2 cup brown sugar
3 tbs light corn syrup
1 tbs butter
1/4 cup chopped nut meats
